Grilled Veggies…… indoor

Thanks to my grill pan, when its 17 degrees out and I’m out of gas on the real grill I’ve got my Calphalon Yippie!!
This is a super easy dish and you can use what ever vegetables you want. I had squash and fennel so thats what I’m making. This is perfect with beef, chicken or fish. Or some fresh Mozzarella(yummers)
WHAT YOU NEED:

1 Zucchini
1 Summer Squash
1 Fennel Bulb
salt
Olive Oil
and if you have any of that pomegranate vinaigrette  left 🙂

WHAT YOU DO:
cut the veggies into 1/2 thick slices, if you prefer softer veggies cut them thinner. I like them thick so they stay together better.
Sprinkle them generously with salt and set aside, this will actually draw out moisture and they will get the nice grill marks better.
Set aside for 30 min. After sitting rinse them gently and dry them off really well.
Heat your grill pan on high, do not oil the pan it will just smoke.
Drizzle the veggies with olive oil and place on pan.
Do not over crowd or they will not brown. I did mine in 3 batches.
Once they are done sprinkle with a little salt and pepper OR drizzle the pomegranate vinaigrette  we made a few blogs ago!
This was a huge success and there was not one left.
I served it with the Lemon Caper Chicken coming up soon!! Enjoy
