Clams Casino a la Mamma

Hahaha that just means my mom told me how :
Can I tell you out of all the things I cook and I cook all the time this was like a commercial, I put them down and turned to go back to the kitchen and when I looked back they were gone and there was a clam shell empty, spinning on the plate! Seriously I can not believe how much the guys loved them and they were so easy I wasn’t sure I was going to blog them but it’s seems like I better. Jerry came for dinner and brought these and steaks, What a friend & he’s the only one who gets in the kitchen with me so its a lot of fun having him over:) Did I mention her also helps clean??
What you need:
24 little necks (or Cherry Stones)
1 rib celery minced
1 small onion minced
2 cloves garlic pressed
1/2 C. bread crumbs
6 slices bacon cut into 2 inch pieces (approx)
splash white wine (optional)
parsley for garnish

What you do:
you gotta get these buggers open and if you don’t want to use your good knives or are afraid to “shuck” them put them on a cookie sheet and put in a 350 degree oven for a few minutes KEEP AN EYE ON THEM!! you just want them to open, not cook. Thats what I do & mom does.
Once they open remove 1/2 of the shell, keep the nicest looking ones for the table, some have cracks etc.
use a paring knife and remove the belly of the clam and put it right back in the shell on to a cookie sheet. (do this over a bowl so you get all the juice to add later.
In a saute pan, saute the onion, celery in 2 tbls butter and garlic until translucent.
once they are cooked add in the bread crumbs and heat through. If you need more add more its really not an exact.
Add a splash of white wine (now mom didn’t do this but Jerry was taking too log with the clams and I needed the juice from them because the breadcrumbs sucked up all the butter I just grabbed the wine to help & it worked out very well).
You want to have a damp mixture and not too wet not too dry. Once they go under the broiler they cook fast so if its too dry it will burn.
add about 2 tlbs of the calm juice to the mix.
Put a spoon full of mix on the clams and top with a piece of bacon.
Put in the boiler for about 5 minutes until bacon is cooked. Sprinkle with parsley then
you can serve with lemon wedges & watch them FLY!
