Oven Roasted Tomatoes

This may be the easiest thing you make but the uses are endless….
These store well in a plastic container in the fridge or freezer.
What to do with the tomatoes from the supermarket in January. They are not meant for salads. They are pale, tough & tasteless. Nothing like the summer tomatoes. So the best trick is to roast them and have them ready for all your dishes. There is nothing easier.
Tomatoes ( as many as you want to have )
Olive Oil
pre heat your oven to 275
cut the tomatoes into 1 inch thick wedges
place them on non-stick foil (one of the best inventions ever)
drizzle them with a little olive oil
Sprinkle them with a tiny pinch of salt
roast in the oven for 3 to 5 hours (depending on how thick they came out)
One they are done let them cool and store them in an air tight container in fridge or freezer.
I make pasta, sandwiches, Bruschetta, risotto & everything you can think of with them!

    This is a really great idea. I’ve seen it a number of times – I shall have to do it myself. It would work perfectly on my blog since sun-dried tomatoes are incredibly expensive.

      Haha It’s crazy I’m like a food addict and a Cook-a-holic. Im pretty much in the kitchen all day. Of course Herb built it so its awesome, Although yours is better!!
      P.S. you are the “Someone” in the blog about the Newport Spice Company and he was talking about you today, he said a couple came in looking for a grinder and cumin & I told him thats why I was there!!
      I’ll have you guys over after I get back from California (be ready for Dog overload)
