Stuffed Zucchini Orb

I was at a farm stand and saw these! I had never seen them and grabbed them. Do these look like they are begging for stuffing or What?!
The guy at the stand called them 8 Ball Zucchini and I looked them up, they are called that and everyone stuffs them.

I did these with meat but can easily be made vegetarian. I usually make one for Herb with meat and one for me without.
WHAT YOU NEED:
2 Zucchini (more or less if you need to feed more people-1 per person) If you can not fine the Zucchini balls use regular zucchini cut in half the long way.
1/4 lb ground turkey or other ground meat
1 cup brown rice cooked
1 Cup tomatoes chopped (I had cherry tomatoes right from the garden)
1 cup grated Parmesan cheese
1/2 cup corn (I had a few ears already cooked from the night before)
1 cup chopped onion
2 Garlic cloves, minced
Fresh basil & Oregano
Salt & Pepper

WHAT YOU DO:
Cut the tops off the zucchini. SAVE
Using a spoon scoop out the insides. (save about 1/2 and chop for the stuffing)
In a sauté  pan, saute onions until translucent, add in garlic & ground turkey. (If you prefer no meat just skip to next step)
Saute on medium/high heat until turkey is just about cooked through then add the remaining ingredients except cheese
( I know, So simple, right?)
Once everything is heated through remove from heat and add the grated Parmesan cheese and mix. (It will cook in the oven as well)
Fill the zucchini’s with the stuffing. Press down the stuffing so it is nice and full.
Place the tops back on, these will act as a cover and steam/cook the ingredients.
Bake in the oven at 375 for 25 minutes. Because the meat is already cooked they just need to bake and get nice and hot.
To serve, place on a place and tip the top to the side a little so you can see the stuffing and garnish with some parsley.

Oh & I’d like to thank my friend Kelley for posting my Blog to Facebook and sharing with her friends and telling me I found my calling, how nice. It means a lot coming from her she is smart and funny & a true friend 🙂 I can’t wait to cook for you soon!
